Typically, Louisiana provides pond raised crawfish from January - July. After July, restaurants and wholesalers scramble to find live crawfish. This is where the California Crawfish company steps in. We are able to provide FRESH LIVE crawfish from July - October. This is the same species as the red swamp variety found in Louisiana.
